Lenten Orange Velouté

Method

  1. Sauté the thinly sliced onions with the cumin seeds, dry, then add a little broth.
  2. Add the carrots, squash and sweet potato cut into small pieces.
  3. Add the miso and mix well.
  4. Cover the vegetables with broth.
  5. Add the ground cumin and grated ginger.
  6. Simmer over low heat until the vegetables are tender.
  7. Stir in the tahini and adjust the salt and pepper.
  8. Blend everything into a smooth velouté.
  9. Serve hot, optionally garnished with sesame seeds or a drizzle of olive oil.
