Lenten Orange Velouté

Method
- Sauté the thinly sliced onions with the cumin seeds, dry, then add a little broth.
- Add the carrots, squash and sweet potato cut into small pieces.
- Add the miso and mix well.
- Cover the vegetables with broth.
- Add the ground cumin and grated ginger.
- Simmer over low heat until the vegetables are tender.
- Stir in the tahini and adjust the salt and pepper.
- Blend everything into a smooth velouté.
- Serve hot, optionally garnished with sesame seeds or a drizzle of olive oil.
