Apple-Vegetable Soup

Method

  1. Cut the kohlrabi, carrots, celery and pepper.
  2. Sauté them in a large pot with a little oil until just cooked.
  3. Add the vegetable broth and simmer 30 minutes.
  4. Peel and core the apples, then add them to the pot; cook another 15 minutes.
  5. Let the soup begin to cool; take a little broth, mix it with the flour, then pour it back into the pot, stirring carefully.
  6. Bring back to a boil.
  7. Add the sugar, lemon juice, salt and pepper to taste.
  8. Optional: blend the soup, to taste.
