Mediterranean Vegetable Rice

Method
- Sauté the onion, garlic and pepper in the olive oil until soft.
- Add the zucchini and tomatoes and cook 5 minutes.
- Add the rice and stir to coat it in the oil.
- Pour in the broth, season with salt and pepper, add the oregano.
- Cover and cook over low heat 20 minutes, until all the liquid is absorbed. Serve hot.
