Polenta with onions and tomatoes

Method
- Cook the polenta per the package instructions.
- Once thick, spread it on a large plate or tray in a 1-2 cm layer.
- Let it cool completely, then cut into cubes.
- In a pan, sauté the onions in vegetable oil or margarine.
- Add the peeled, crushed tomatoes, season with salt and pepper and flavour with thyme and bay leaf.
- Fold in the polenta cubes and simmer until everything is hot and well combined.
- Optional: for richer flavour, add a little vegetable tomato sauce.
