Polenta with onions and tomatoes

Ingredients

Method

  1. Cook the polenta per the package instructions.
  2. Once thick, spread it on a large plate or tray in a 1-2 cm layer.
  3. Let it cool completely, then cut into cubes.
  4. In a pan, sauté the onions in vegetable oil or margarine.
  5. Add the peeled, crushed tomatoes, season with salt and pepper and flavour with thyme and bay leaf.
  6. Fold in the polenta cubes and simmer until everything is hot and well combined.
  7. Optional: for richer flavour, add a little vegetable tomato sauce.
