Green Bean Stew

Method

  1. Chop the onion and garlic; slice the carrots.
  2. Heat the olive oil in a large pot over medium heat.
  3. Add the onion, garlic and carrots; sauté 7 minutes until the onion is translucent. Season lightly with salt.
  4. Add the potatoes and 250 ml of water; cook 10 minutes over medium heat.
  5. Blanch the green beans 5 minutes in boiling salted water; drain and rest 5 minutes.
  6. Add the green beans to the pot with another 250 ml of water; cook 25 minutes over medium heat until all the vegetables are tender.
  7. Stir in the tomato paste, basil and paprika; cook another 5 minutes. Serve hot.
