Creamy Sesame Cauliflower

Method
- Break the cauliflower into small florets.
- Steam or boil in salted water for 10-12 minutes; it should be tender but crisp.
- Heat the oil and cook the onion over low heat until soft and lightly golden; add the garlic at the end.
- Add curry, cumin, turmeric, paprika, ginger and pepper, and let them cook 30 seconds in the fat.
- Stir in the sesame paste, then gradually add the water to loosen the sauce; you get a thick, yellow cream.
- Add the cooked cauliflower, season with salt and lemon juice.
- Sprinkle with fresh parsley and, when serving, a drizzle of raw olive oil.
- A comforting, fragrant dish, good on its own or with basmati rice.
