Creamy Sesame Cauliflower

Method

  1. Break the cauliflower into small florets.
  2. Steam or boil in salted water for 10-12 minutes; it should be tender but crisp.
  3. Heat the oil and cook the onion over low heat until soft and lightly golden; add the garlic at the end.
  4. Add curry, cumin, turmeric, paprika, ginger and pepper, and let them cook 30 seconds in the fat.
  5. Stir in the sesame paste, then gradually add the water to loosen the sauce; you get a thick, yellow cream.
  6. Add the cooked cauliflower, season with salt and lemon juice.
  7. Sprinkle with fresh parsley and, when serving, a drizzle of raw olive oil.
  8. A comforting, fragrant dish, good on its own or with basmati rice.
